Spanish rice

This meal for 6 proves that low-sodium doesn't mean low-taste. It's flavored with low- or no-salt products that can be found in most grocery stores.

Ingredients

3 slices low-sodium bacon
1 1/2 pounds lean ground beef
1/2 medium onion, diced
1 stalk celery, diced
2 cups Minute RiceŽ, white, uncooked
2 cups water
3/4 teaspoon chili powder
1/2 teaspoon black pepper
1 small green bell pepper, diced
1 (14.5 oz.) can no-salt stewed tomatoes
2 (8 oz.) cans no-salt tomato sauce
1 (6 oz.) can no-salt tomato paste
2 beef bouillon cubes (low-sodium)
1/8 teaspoon garlic powder

 

Directions

  1. Fry the bacon and crumble.
  2. In a large skillet, cook the onions and ground beef until the meat is browned. Pour off the fat.
  3. Mix the bacon and the rest of the ingredients into the meat mixture.
  4. Cover and simmer over medium heat for about 30 minutes.
  5. Stir occasionally. You may want to add more water if the rice is too thick.
