Shortcut minestrone soup

This Italian-style soup may taste like it takes a lot of time, but you can fix it in about a half an hour.

Ingredients

8 cups water
2 cans (14.5 oz each) diced, tomatoes, undrained
1 pkg. (10 oz) frozen chopped spinach
1 pkg (10 oz) frozen BOCA Meatless Italian Sausage, cut into 1/2-inch thick slices
2 medium carrots, sliced
1 medium onion, chopped
1 cup bow tie pasta, uncooked

 

Directions

  1. Place all ingredients in Dutch oven or large saucepan. Bring to boil on medium-high heat, stirring occasionally.
  2. Reduce heat to medium-low; simmer 15 minutes or until carrots are tender, stirring occasionally.
 

Tip: Remove sausage from freezer 5 to 10 minutes before cooking.
