Savory meatloaf
Enjoy an old standby in a healthful way.
Ingredients1 pound ground beef, extra lean
1/2 cup salt-free tomato paste (4 ounces)
1/4 cup onion, chopped
1/4 cup green pepper, chopped
1/4 cup red pepper, chopped
1 cup tomatoes, fresh, blanched and chopped
1/2 teaspoon mustard
1/4 teaspoon ground black pepper
1/2 teaspoon hot pepper, chopped
2 cloves garlic, chopped
2 stalks scallion, chopped
1/2 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1 teaspoon grated orange rind
1/2 teaspoon crushed thyme
1/4 cup finely grated bread crumbs
Directions
- Mix all ingredients together.
- Place in 1-pound loaf pan (preferably with a drip rack) and bake covered at 350 degrees Fahrenheit for 50 minutes.
- Uncover pan and continue baking for 12 minutes, or until done.
